Sencha is a type of Japanese green tea prepared without grinding the leaves. After harvesting, the leaves are heated with steam to stop oxidation, unlike Chinese green teas, which are heated in ovens and woks. This results in a fresh taste with notes of the sea, tropical fruits and umami (in the case of high-quality teas). Then the leaves are dried with hot air, sorted, finally dried on heated tables and formed into needles.
